Green Lentil Soup

This wholesome soup is a great meal that will nourish your body while leaving you light enough to perform at your best in your next workout!

  • Large Pot
  • Stick Blender

Ingredients

  • 1.5 Cups Green Lentils
  • 1 tbsp Olive Oil
  • 1 Each Onion
  • 3 tsp Garlic Crushed
  • 1 each Carrot
  • 2 tsp Ground Cumin
  • 0.5 tsp Ground Cinnamon
  • 1 each Bay Leaf
  • 1 litre Vegetable Stock
  • 1 litre Water
  • 1 cup Peas Fresh or Frozen
  • 1 head Broccoli
  • 150 gram Frozen Spinach
  • 1 tbsp Salt
  • 1 tbsp Black Pepper

Instructions

  • Rinse Lentils Thoroughly, Dice Onion and Carrot
  • Heat oil in pan, add Onion, Carrot, Garlic and cook until onion is tender and clear
  • Add spices and bay leaf and cook until aromatic
  • Add stock, water and lentils, and cook for 25-30 minutes
  • Add peas, broccoli and spinach, cook for a further 10-12 minutes until broccoli is tender
  • Puree soup with stick blender until smooth
  • Optionally, server with your choice of bread
